Chef Via Melissa’s Post Holiday Detox Salad

 

My story:

For many years, I would often host a cooking class or workshop in January called a Post Holiday Detox and it would entail super clean dishes such as this Post Holiday Detox salad that would help people jump start and commit to their New Year’s Resolutions for eating healthier and cleaner coupled with detoxing from excess drinking and binging during holiday time. The detoxing ingredients in this salad are arugula, fresh squeezed lemon, olive oil and sea salt. Buon appetite!

Ingredients

4 cups arugula salad

1 lemon

6 cherry-heirloom tomatoes

¼ cucumber

¼ cup pistacios

6 artichoke hearts

1 tbl spoon Olive oil

¼ tsp sea salt




Directions:

Add salad to a bowl

Top with olive oil and squeeze whole lemon

Add sea salt and toss all together

Slice cucumbers and add, then top with tomatoes, artichoke hearts and pistachios
