Pesto Spaghetti with Grilled Prawns
Look at the size of these prawns. Grill them up and serve them with a portion of spaghetti with a Basil and Parsley Pesto made with walnuts, basil, parsley, garlic, lemon juice and olive oil. Simple and delicious. Chef and cook book author Pamela Morgan shares the step-by-step details which she recently did with her non-chef husband who whipped this up since Pam is recovering from a ski accident. Ingredients
- Basil and Parsley Pesto
- 1/2 cup Walnuts
- 3 Garlic, cloves
- 2 cups Basil
- 1/2 cup Parsley
- 1/4 cup Nutritional Yeast
- 3/4 cup Extra Virgin Olive Oil
- 1/2 lemon, juice
- Salt
- Black Pepper
- Grilled Praws
- 6 Head on prawns
- 3/4 cup Extra virgin olive oil
- 1/2 tablespoon Sea salt
- 1/4 tablespoon Freshly ground black pepper
Spaghetti
- 1 pound Spaghetti
Instructions
Basil & Parsley Pesto
- Combine basil, parsley, nutritional yeast, garlic, walnuts, EVOO, lemon juice in a large food processor bowl. You can substitute Parmigiano-Reggiano for nutritional yeast.
- Blend to a smooth paste
- Season to taste
Grilled Praws & Spaghetti
- In a large bowl toss the prawns with EVOO, salt, and pepper
- Mix well and let the prawns marinate, covered and chilled for two hours
- In a large pot, bring a gallon of salted water to boil
- Cook spaghetti according to package instructions
- Grill the prawns in a hot grill pan for about 3 minutes on each side.
- Remove the prawns to a platter
- Deglaze the grill pan with 1/2 cup of pasta water
- Drain the pasta
- Add pasta back into the large pot
- Add the deglazing liquid back into the pasta
- Add 1 cup of pesto
- Stir, add more pasta water if needed
- Taste for seasoning
- Place on a large platter, and garnish with grilled prawns
