 Instagram is one of my favorite places to discover food trends. With food stylists, food magazines, and prominent chefs boasting their latest eats and creations, it’s so easy to find inspiration within these gorgeous photos! With a spike in healthy lifestyles [5] many of these photos feature something green. Cold, green juices, crunchy green salads, and nutrient rich bowls [6] showcase our inner lean and green culinary endeavors. Recently, there’s been a very big trend that I’ve been noticing, and it’s not just on Instagram! Food bloggers are talking about it, it’s on every hot menu across the city, and my friends are eating it non-stop. What is it? Avocado toast, of course!

Now, the avocado craze is nothing new. Ever since Chipotle hit the market charging extra for their guacamole, there’s been a demand for this power food. So much so, that there’s even buzz about an avocado shortage. So, why avocado on toast? I say, why not?! I start my day with an avocado toast because it’s super yummy and is LOADED with nutrients. And, if you know me, you know that I love playing with my food. Avocado gives me a blank canvas to create beautiful plates reminiscent of Picasso’s best. I should be featured at the MoMA, don’t you think? On top of all of this avocado toast is all kinds of delicious! The avocado acts as a buttery spread, and will have you saying goodbye to boring old toast and jam!

 As proof, this week I’m showing you three different ways to add some sizzle and flavor to your avocado toast. Adios, boring breakfast! Hello, flirtatious and nutritious! The three toasts I’ve featured here are good for any meal or even a snack!

 


INGREDIENTS:

Bread of choice, toasted (I used a multi-grain)

1 ripe avocado, thinly sliced or mashed

salt and pepper, to taste

Toppings of your choosing; can include:

Eggs

Seeds

Nuts

Bean Sprouts

Arugula

Radishes

Blackberries

Pomegranate Seeds

Lemon

And, of course, spices!
