Soba Noodle & Bok Choy Soup with Poached Eggs

We love this Japanese inspired soba, baby bok choy and poached egg soup.  Many soba noodles are gluten free, high in protein and rich in thiamin. Bok choy is a powerhouse vegetable with a wealth of vitamins C, A, and K, and excellent sources of calcium, magnesium, potassium, manganese, and iron. And eggs  are the least expensive source of high-quality protein. This recipe is nutritious, low in calories, and can be prepared in 25 minutes.
