Asian Spiced Shrimp & Gluten Free S’mores

Asian-Spiced Shrimp Topped with Kimchi Print This Post
Serves 3
Spice up your crackers with this light, tangy recipe. It’s quick and simple but sure to leave all your guests impressed!
Ingredients:
- 1 small ring of pineapple, finely chopped
- 3 tablespoons beansprouts
- ½ cup jumbo shrimp, cooked
- 1 inch cucumber, peeled and finely chopped
- 3 tablespoons spring onions, roughly chopped
- Small bunch cilantro, roughly chopped
- 2 teaspoons unsalted cashews, toasted if preferred, crushed
- ½ clove of garlic, crushed
- 1 small red chile pepper (seeds in for extra heat or taken out if you prefer), finely chopped
- ½ lime, squeezed
- Dash of tamari sauce
- Squeeze of honey
- Nairn’s Organic Oat Crackers or Nairn’s Gluten Free Oat Crackers
Instructions:
- Mix all ingredients in a bowl and spoon onto your gluten free crackers
- For an extra kick, top with kimchi, which you can buy premade from most supermarkets

Nairn’s Gluten-Free S’mores
You don’t have to wait until summer to fire up these s’mores! They’re also delicious and fun to make at home by the fireplace or in the oven, as shown in this recipe.
Make them gluten-free by using Nairn’s oat grahams.
Ingredients:
- Marshmallows
- Chocolate bar
- Nairn’s Oat Grahams
Instructions:
- Preheat the oven to 400°F
- Lay half of the graham crackers on a cookie sheet. Top with chocolate pieces to cover
- Top each graham with two marshmallows
- Bake until the marshmallows are puffed and golden brown, about 3 to 5 minutes
- Remove from the oven and top with the remaining graham, pressing down slightly to make a sandwich. Serve immediately, while still warm
