Chia Eggs and Gluten Free Pancake Batter
No egg? No problem! Chia egg to the rescue.
In today’s world of rising costs and low supply of eggs, I want to introduce you to substituting with a chia egg!
Vegans have been baking with chia eggs for many years, and now it’s time to adapt this methodology into your own baking & sweet treat needs in a time of low egg supply and surging prices! These make a great replacement for all items that call for an egg to use as a binder in any recipe from pancakes to waffles, muffins, cookies & cakes.
Chia Egg Replacement + GF / DF Pancake Batter Recipe
How to make a chia egg – 1 egg equivalent
*if a recipe calls for 2 eggs, scale up and double the below
INGREDIENTS
1 tbl spoon chia seeds
1/4 cup water
DIRECTIONS
Add chia seeds and water to a small cup or bowl and mix well with a spoon. Let sit for 10-15 minutes for the chia to gelatinize and become a consistency similar to an egg.
Add to any recipe as you normally would
Here is a recipe for one of my custom pancake / waffle blends and you can incorporate the chia egg as the replacement, buon appetite!
Vegan GF / DF Blueberry Corn Waffles / Pancakes
INGREDIENTS
1 cup corn meal
1 cup GF flour – I use millet, oat or cassava
1/3 cup sugar
1 tsp baking powder
1 tsp cinnamon
2 chia eggs
1 cup dairy free milk
1/4 cup coconut oil
1 tsp vanilla flavoring
1 cup blueberries – fresh or frozen
DIRECTIONS
Make chia eggs
Combine all dry ingredients and mix together
Melt coconut oil
Add all wet ingredients + blueberries and mix together
Prepare pancakes on a stovetop (1/4 cup of batter 2-3 min on each side on medium heat) OR waffles in a waffle maker as you. normally would…buon appetite!
