Chickpea Pasta Salad
Here’s a refreshing and flavorful Chickpea Pasta Salad that’s perfect for summer gatherings or a light meal. It combines the goodness of chickpeas, fresh veggies, and zesty dressing. Let’s get cooking!
Ingredients
- 3 cups cooked Rotini noodles
- 1 can (15 oz each) garbanzo beans, drained, rinsed
- 1 can (14.5 oz each) Hunt’s® Diced Tomatoes, drained
- 1/2 cup diced cucumber, peeled
- 1/2 cup crumbled feta cheese
- 1/2 cup sliced olives
- 1/2 cup diced red onion
- 1/4 cup olive oil
- 3 tablespoons lemon juice (1-2 lemons)
- 4 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/3 cup fresh Italian (flat-leaf) parsley, optional
Directions
Step one
Cook rotini pasta noodles according to package directions.
Step two
Stir together all pasta salad ingredients in a large bowl until blended.
Step three
Garnish with parsley if desired and serve at room temperature or refrigerate until chilled.
