Hearty Chicken Sausage & White Bean Soup

Serves: 4 people

Yield: 5 cups

Ingredients

  • 2 tablespoons olive
  • 2 links, chicken sausage
  • 1 can, white beans
  • 4 cups bone broth
  • 1 bag, fresh spinach

Garnish

  • 1 tablespoon chopped, scallion
  • 1 tablespoon julienne, fresh basil
  • grated, parmigiano reggiano

Instructions

  1. Heat up olive oil in a medium size pot
  2. Add chicken sausage (substitute for preferred sausage), and white beans
  3. Stir for 2 minutes
  4. Add bone broth, when it comes to a boil add the spinach and stir
  5. Taste for seasoning
  6. Garnish with scallions, and fresh julienned basil
  7. Finish off with freshly grated parmigiano reggiano
