Poached Salmon and Dill Sauce
We love salmon and poached salmon is so easy to prepare and is a great summer meal. Serve it hot or cold, and it’s a great picnic meal too. Here’s the recipe and the video and plus a dill sauce.
Poached Salmon and Dill Sauce

- Yield: Serves 2 to 4 or more, depending on the size of the fillet
INGREDIENTS
- 1 to 1½ pounds salmon fillets, pin bones removed
- Salt
- ½ cup dry white wine (a good Sauvignon Blanc)
- ½ cup water
- 1 shallot, peeled and thinly sliced or a few thin slices of onion
- Several sprigs of fresh dill or sprinkle of dried dill
- A sprig of fresh parsley
- Freshly ground black pepper
- A few slices of fresh lemon to serve
Preparation
1/3 cup sour cream
Dill Sauce
- 1/3 cup mayonnaise
- 1 tablespoon finely chopped onion
- 1 teaspoon lemon juice
- 1 teaspoon prepared horseradish
- 3/4 teaspoon dill weed
- 1/4 teaspoon garlic salt Pepper to taste
Combine sauce ingredients until smooth.
