Recipes: Chickpea Pancakes

Do you like pancakes? I know I do. I remember waking up on Sunday morning in Wichita Falls, Texas and my mom would be flipping pancakes, and the smell in our house would be so delicious. Now that’s such a nice memory.
I love making pancakes for my own family but I’ve been looking for a more nutritious way to make them with no gluten and less sugar. I found a delicious alternative… chickpea flour.
The Italians have been using it for hundreds of years; and it has a boatload of fiber and protein.
I prepared two different chickpea pancake recipes. one savory and one sweet.
This recipe is completely versatile so feel free to change up the toppings. You can sauté mushrooms, onions, and chicken to make a delicious dinner, or make it into a taco night with ground turkey, taco seasoning, and condiments.

Sweet Chickpea Pancakes Print This Post

Serves: 4|Yield: 8 pancakes
Ingredients
Pancake
- 2 cups chickpea flour
- 1/2 cup ricotta cheese
- 1 tablespoon cinnamon
- 1 tablespoon vanilla extract
- 1/4 cup coconut sugar
- 2 cups water
- Extra Virgin Olive Oil
Papaya Salsa
- 1 papaya, cubed with seeds
- 1 cup blueberry
- 1/2 cup frozen raspberry, puree
- 1/4 cup fresh mint, chopped
- 1/2 cup coconut syrup
Instructions
Pancakes
- In a large bowl add all ingredients and stir to combine. Start adding the water in slowly all the time whisking to combine.
- Mix until all lumps are removed, and the batter has thickened enough to coat the back of a spoon
- Let the batter rest for 10 minutes.
- Heat large cast iron skillet until smoking hot. Add 2 tbsp EVOO.
- Using a ladle, spoon about 1/2 cup of batter into pan for each pancake.
- Cook the pancake for 2 minutes on each side. Cooking time depends on the thickness of the pancakes.
- Layer the pancakes on a plate after cooking to lock in moisture, and heat.
Papaya Salsa
In a large bowl mix all fruit salsa ingredients together. Let the fruit juices macerate for 5 minutes.
Serve
Top each pancake off with a little bit of fruit salsa, and some fresh mint for garnish. Drizzle with more coconut syrup or you can use maple syrup.

- 1 tablespoon garlic powder
- 1 tablespoon cumin
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
- 1 teaspoon salt
- 2 cups water
- Extra Virgin Olive Oil
Avocado Salsa
- 1 avocado, cubed
- 1 cup tomato, chopped
- 1/2 cup red onion, chopped
- 2 scallion, thinly sliced
- 1 lime, juiced
- 1 teaspoon salt
- 1/2 cup chopped cilantro
Instructions
Pancakes
- In a large bowl add all dry ingredients. Start slowly whisking in the water.
- Mix for 5 minutes until all lumps are removed, and the batter has thickened enough to coat the back of a spoon
- Let the batter rest for 10 minutes
- Heat large cast iron skillet until smoking hot. Add 2 tbsp EVOO.
- Using a ladle, spoon in the pancake batter. Each pancake should be about 1/2 cup of batter.
- Cook the pancake for 2 minutes on each side depending on the thickness of the pancakes.

Avocado Salsa
In a large bowl mix all chopped vegetables together, squeeze lime juice, and add the salt
Mix the salsa together, and let the juices macerate for 5 minutes before serving
Serve
Top each pancake off with a little bit of salsa, and garnish with fresh cilantro.
