Southwest Style Coleslaw

Cabbage is a true power food.  Ancient healers called it moon power because it grew in the moonlight.   It’s high in Vitamin C and Vitamin K and it’s low in calories. It’s a great brain food, good for weight loss, and it has cancer fighting compounds, helps lower blood pressure, is anti-inflammatory, and can relieve headaches.

This easy to make coleslaw combines red and geeen cabbage. It has great flavors like cilantro and cumin, and is light in calories too.  It’s great for outdoor entertaining because it contains no mayo that can spoil.  Goes with anything. We just served it this weekend with barbeque spare ribs.  Delicious!

Ingredients

  • 4 cups of thinly sliced green cabbage
  • 4 cups of thinly slice red cabbage
  • 2 scallions sliced thin
  • 1 cup of julienne carrots
  • Half cup of cilantro – chopped
  • Half cup of parsley – chopped

Dressing

  • 1 Clove of garlic diced
  • 1 tablespoon cumin seed
  • ¼ cup of lemon juice
  • Half cup of olive oil
  • 2 tablespoons of white vinegar
  • Salt & pepper to taste
  • Stir well

Add to cabbage, mix really well.  Serve.
