Two Delicious Fig Recipes
Yep, this fig tree was a sapling from a neighbor’s yard. Now four years old, it has produced figs for the past three years and this year’s crop was bountiful. But if you don’t have a fig tree, fresh figs are available in many markets. Try these recipes.
Fresh figs are in season right now and the “Head Tomato” is sharing two yummy recipes today that she made from the fresh figs from her fig tree that lives in a container on her deck in the summer and then spends the winter hibernating in the garage.
Fig Salad
Ingredients
- Arugula or other greens
- Fresh figs
- Proscuitto
- Gorgonzola Cheese
Use any greens you like, and place a handful on each plate. Cut the figs in half and place 2 on top of the greens. Then place 2 slices of prosciutto on the plate. Salt/pepper to taste. Add crumbled gorgonzola and then drizzles with olive oil and balsamic vinegar. Devine!
Figs for Dessert
This is so decadent.
Put a scoop or two of vanilla bean ice cream in each bowl.
Add at least two figs cut in half.
Drizzle with honey (we prefer raw honey)
And this may not be for everyone, but for added decadence, sprinkle on some crumbled gorgonzola of goat cheese.
You’ll think you went to heaven.
The tomato behind The Three Tomatoes.
Cheryl Benton, aka the “head tomato” is founder and publisher of The Three Tomatoes, a digital lifestyle magazine for “women who aren’t kids”. Having lived and worked for many years in New York City, the land of size zero twenty-somethings, she was truly starting to feel like an invisible woman. She created The Three Tomatoes just for the fun of it as the antidote for invisibility and sent it to 60 friends. Today she has thousands of friends and is chief cheerleader for smart, savvy women who want to live their lives fully at every age and every stage. She is the author of the novel, "Can You See Us Now?" and co-author of a humorous books of quips, "Martini Wisdom." Because she's lived a long time, her full bio won't fit here.
