Ingredients:
3 cups cubed watermelon
2 cucumbers, thinly sliced
1/2 onion, chopped
1 carrot, thinly sliced
1/4 cup apple cider vinegar
1 teaspoon red pepper flakes
2 tablespoons chopped mint
1 tablespoon chopped cilantro (optional)
Salt and black pepper to taste

Directions:
1. In a large bowl, combine all ingredients
and toss gently.

removed
1 cup cooked black beans
1/2 cup chopped onion

1 garlic clove, minced

1 tablespoon chopped cilantro (optional)

Directions:
1. In a large bowl, combine all ingredients
and toss gently.
